Spirulina
Vivid blue-green from freshwater algae
Spirulina color is extracted from the blue-green microalgae Arthrospira platensis, cultivated in warm, alkaline freshwater ponds. The algae are harvested by filtration, then washed and dried at low temperatures to preserve pigment quality.
The key pigment is phycocyanin, a water-soluble protein complex responsible for the bright blue tone. To isolate it, gentle extraction with cold water is used, followed by purification and concentration. Because phycocyanin is sensitive to heat, light, and low pH, processing and storage require special care. Today, modern stabilization techniques like microencapsulation or buffered systems help extend shelf life and improve performance in a wider range of products.
Technical Notes:
pH stability: Sensitive to low pH – fades in acidic conditions (below pH ~4)
Light stability: Moderate – requires protection from direct light
Heat stability: Low – not suitable for high-heat applications
